If you want to lose weight, you should not miss the energy source fat – only the right one has to be the right one and not for nothing the avocado is also affectionately called “fat fruit”. In addition to its healthy fatty acids, the avocado also provides many healthy micronutrients: vitamin A, C, E and folic acid as well as the minerals potassium, magnesium and iron.

Avocado shopping: Recognizing the right ripening process
If you’re an avocado fan, you know it: How do I recognize the perfect maturity of an avocado? Many supermarkets already label certain avocados as “ready to enjoy” or “ready-to-eat” – those who still have to store the fruit at home for a few days are best advised to put it in the vegetable compartment of the refrigerator.
If you have bought your avocado a bit too ripe and want to process it further, wrap it with another fruit (e.g. a banana or apple) in newspaper, this will speed up the ripening process! Once the avocado has been sliced, simply add a little lemon juice to the edges of the cut so that it retains its pale green colour.

Avocado with poached egg
The classic par excellence: Bring water to the boil with a dash of vinegar, remove from the heat and slide in a fresh egg using a ladle. After 3 to 4 minutes the egg is soft as wax. Place in the avocado, halve it and remove the seeds, salt, pepper and you’re done!
Goat cheese sandwich with avocado
Aromatic, buttery and ready in no time: toast with avocado slices, goat cheese and tomatoes. Season with lemon juice, salt, pepper and maybe some chilli. Then toast in the sandwich maker and crispy.
Creamy breakfast drink that is guaranteed to fill you up: Puree half an avocado, lime juice, apple, cucumber and mint in a mixer with a few ice cubes. Deliciously fresh and aromatic. Perfect for the summer!
Avocado with sheep cheese and tomatoes
Tastes like a holiday in Greece: Crush the avocado with a fork. Season with lime juice, salt and pepper and mix. The avocado cream with some chopped garlic tastes even better. Coat the toast with it and then sprinkle with halved cocktail tomatoes and crumbled sheep’s cheese. So delicious!
