Morrocan Vegetables with chickpeas

This
recipe is very easy and may help fussy children
eat their vegetables. Also, the spices in
this dish have many health benefits (anticancer,
antiinflammatory actions). This dish can
be made with any vegetables as an alternative
to stir frys.
Ingredients
1 cup of cauliflower tops
1 cup chopped cabbage
3 celery stalks
1 green pepper
1 can of chickpeas (drained) (optional)
1 onion, chopped
3 garlic cloves, crushed
1 tbs moroccan seasoning (e.g Masterfoods)
1 tsp turmeric
1 tsp ground coriander seeds
2 tbs tomato paste (optional)
extra virgin olive oil or rice bran oil
2 tbs coconut powder (optional)
1 cup wine or vegetable stock
Method
1. Heat oil, onions, garlic, and spices
in pot.
2. Add vegetables, wine, tomato paste, coconut
3. Simmer for about 30min or until vegetables
are tender
4. Serve warm with rice.
