Foiled Fish in a Flash

1 fish fillet
We recommend fish high in Omega-3 fatty acids, such as
Gemfish (500mg/100g),
Rainbow Trout (450mg/100g),
Salmon (380mg/100g),
or Tuna

1 tablespoon of lemon juice
Fresh or dried herbs
We recommend rosemary, oregano or dill
1 teaspoon of Extra virgin olive oil


Method:

1. Preheat a barbeque grill or frying pan to hot.

2. Place a fish fillet on each piece of foil and drizzle with olive oil

3. Sprinkle the fillet with lemon juice and herbs (and salt optional)

4. Fold the foil to seal completely

5. Place the foil package on the barbeque or frying pan and cook for approximately 8 minutes, turning after 4 minutes.

6. Test the fish by flaking the thickest part of the fillet with a fork. If the flesh is white (or light pink in the case of salmon) the fish is cooked.

7. Serve the fish with steamed vegetables or salad on a bed of your favourite rice.

Tip for kids: To encourage children to eat the fish, try mixing the fish in the rice, or alternatively serve with a little bit of caviar dip or low-fat mayonnaise.
