Semolina
and Yoghurt cake
2 cups semolina
3/4 cup castor sugar
1 tsp baking powder
1/2 tsp bicarb soda
1 cup low fat yoghurt
2 eggs
1/4 cup rice bran oil or grapeseed oil (these
are high in vit E and have a light taste)
1 tsp ground cinnamon
1 tsp vanilla essence
1 cup orange juice
Method:
1.
Preheat oven to 180C and spray a large square
tin/baking tin with oil.
2. Mix semolina, sugar, baking powder and
bicarb soda in a bowl. Whisk together yoghurt,
eggs, oil, cinnamon, vanilla and half the
orange juice in a small bowl.
3. Pour yoghurt mixture into semolina and
stir well.
4. Pour cake batter (will be quite runny)
into cake tin and spread evenly.
5. Bake for 25-30min until golden brown
and firm.
6. Remove from oven and pour oven remaining
juice whilst hot.
7. Allow to cool and cut into squares.
(150calories
per slice and 5g fat, 12g sugar).
