Oatmeal Apple Upside Down Cake

Cake
1 cup wholemeal self raising flour
1/2 cup quick oats
2/3 cup boiling water
1 teaspoon baking powder
1 teaspoon ground cinnamon
2/3 cup brown sugar
1/4 cup peanut oil
1 egg

Apple topping

4 apples diced (or 2 cups diced rhubarb)
4 tablespoons sugar
1/2 teaspoon cinnamon
1/2 teaspoon clove
2 tablespoons margarine

Method:

1. Grease and flour a cake tin. Set aside. Pre-heat oven to 180oC.
2. Place diced apple in a pot - add sugar and spices. Cook on low heat till apples are semi-soft. Remove from heat. Add two tablespoons of margarine. Pour apple mixture into cake tin.
2. In a small bowl pour boiling water over the rolled oats - let stand for 20 minutes.
3. In another small bowl stir together flour, baking powder, cinnamon.
4. In a medium bowl beat sugar, oil and egg till combined. Add the oat mixture and beat well. Add the flour mixture and beat just until combined (do not over beat).
5. Pour cake mixture over apple in cake tin. Bake in oven for about 50 minutes or until toothpick inserted near the centre comes out clean.
